Who doesn’t love one pot meals, I mean just throwing everything in one pot, cook and walla, its ready to eat. Even more liberating, eating from a pan (hahaha). Something saucy, tasty and so flavorful in just one pan, mmmmh!!
Well, this other morning I wanted to make a quick breakfast, something warm and filling for my husband. I had a few of ingredients in mind, however, I wanted to serve them differently.
So this ‘One Pan breakfast” idea came to mind, my, my I have to say it was a winner. It worked perfectly, it saved time and moreover I didn’t have to wash a lot of dishes afterwards (giggles).
I mean the fewer dishes you have to wash, the better right? I know you agree with me. Let me share my quick recipe with you!
Ingredients
Serves One
2 rashers bacon
1 tbs olive oil
¼ cup sliced red onion
½ cup medley tomatoes (halved) you can use normal tomatoes.
1 tbs tomato sauce
½ tin of baked beans
1 egg
Handful roughly chopped parsley for garnish
Salt and peppercorns for taste
Toast to serve
Avocado sliced (optional)
Method
Heat oil in a large pan and add the bacon, fry for 2 to 3 minutes or until browned. Add the onions and tomatoes; cook until the tomatoes start to break (2 to 3 minutes). Add tomato sauce over the tomatoes, season with salt and black peppercorns. Add baked beans and bring to gentle bubble. Make a space in the mixture and crack the egg. Cover and simmer on low heat for 3 to 4 minutes, depending how done you prefer your eggs done. I like my easy over. Sprinkle with parsley, salt and black pepper. Serve warm with toast. Enjoy
