Quick baby spinach, beetroot and pumpkin Salad

Isn’t it interesting how one can make a tasty quick salad with just few ingredients?

All you need is five ingredients then VOILA we are ready to munch down!!

For this awesomely deliciously amazingly yummily salad you need the following:

100g Baby spinach leaves
1 medium Cooked beetroot, sliced
½ Steamed pumpkin, diced
½ medium Onion, thinly sliced
Black peppercorn

Firstly lay the baby spinach leaves in a salad bowl or plate, top the leaves with the onion, beets, and pumpkins. Sprinkle with black peppercorn and serve! I prefer mine with a squeeze of fresh lemon juice!

By the way, this salad’s idea came up on Monday, when I did not know what to do with Sunday’s lunch leftovers after cooking up a storm “as is always the tradition in our home on Sunday”. So why throw away your leftovers whilst you can reuse them in a classy and yet yummy way?! 
