Salmon stuffed gem squash with chef Mbombi

INGRIDIENTS

Gem squash

STUFFING

240g Salmon

1 bell red pepper

1 bell green pepper

1 bell yellow pepper

Sweet corn

Pinch of salt

Black ground pepper

1 red onion

Mixed herbs

Olive oil

METHOD

  1. Boil gem squash until soft then leave to cool down
  2. Dice peppers and onion
  3. Heat your pan and sauté peppers and onion then season with salt and pepper and place in a bowl
  4. Dice salmon and sprinkle with mixed herbs, salt and pepper then pan fry, once done place in a bowl with the pepper and onion mixture
  5. After your gem squash has cooled down ,spoon out the inside and mix together with salmon and pepper mixture (make sure you keep the gem squash skin as you will use that as a serving holder or dish)
  1. Once mixed properly spoon in the mixture in the gem squash holders or skin
  2. Serve hot and enjoy
    I am pretty much sure you have realized that in the dish there is no starch element so if you are not starch conscious you can always add couscous, and enjoy with sides like roasted potatoes.
