Don’t you just love salads like I do, whether summer or winter? Mmmm I think you do too.
Well I know that sometimes one can run out of ideas. I thought I should share with you, a warm salad my “specialty Pumpkin and Bean Salad”.
Ingredients
1 cup cut green beans, (blanched, drained and seasoned with dried thyme)
1 410g can Red kidney beans, drained and rinsed
1 cup, steamed pumpkin ( diced)
½ cup diced, red and yellow peppers
½ cup sliced baby marrows, ( stir- fried for 2 minutes in little of oil)
Salt and pepper for taste
1 tsp dried mixed herbs
½ cup, diced black pepper feta cheese
In a salad bowl, Toss all ingredient together, season with mixed herbs, salt and pepper
Dressing
1 tbsp. lemon juice
3 tbsp. olive oil
Salt and ground black pepper
3 tbsp salad oil/olive oil
2 tbsp chopped spring onion or chives
1 small clove of garlic, crushed
Whisk all together for dressing, pour over the salad.
Enjoy!!
Ps. This Salad can be served warm or cold!
